Favorite Summer No Cook Recipe

I am listed as the agency’s official Chef D’ Cuisine; a position I hold in high regard since Ideas Collide is know as much for our incredible work, as for having a high over-representation of the foodie demographic.

I was recently asked for my favorite “go-to” recipe in the dead heat of summer. As one that loves to throw in the kitchen towel and walk away from the hot stove during the summer months, I find myself gravitating to no-cook recipes.  This works not only because it keeps my already overheated house a few degrees “less hot”, but it keeps meals light as I contend with the fact that I will have to take the kids to the pool.

Below is a versatile salsa recipe that I have been using as salad dressing, shrimp cocktail sauce or over store bought chicken.  This was one of the winning salsas from (one of our clients) Macayo’s Mexican Kitchen’s Salsa Challenge and it is featured in the restaurant’s Summer menu this summer.  So, if you want to walk away from the kitchen altogether, which I do often during the summer, go to Macayo’s to check this and their other winning salsas out.  In the meantime, if you have any other great “no-cook” recipes feel free to share.  I would love to prepare them for the team and bring them to our next brown bag.
